Ingredients:

4 cups water (or chicken broth)

½ teaspoon salt

1 cup quick-cooking grits

2 cups Velveeta (sliced or cubed)

¼ lb. Sharp cheddar cheese grated

½ cup butter

½ teaspoon garlic powder

¼ teaspoon ground red pepper

2 large eggs

Directions:

1. Bring water and salt to boil in medium saucepan. Slowly add grits, stirring constantly. Reduce heat to low. Cook 5 minutes, stirring occasionally. Remove from heat.

2. Add the 2 cups of the velveeta cheese, butter, garlic powder and red pepper to saucepan; stir until cheese is melted.

3. Beat eggs slightly in small bowl. Stir small amount of hot grits mixture into eggs. Stirring constantly, slowly pour egg mixture back into hot grits mixture. Pour into greased 8-inch square baking dish.

4. Bake at 350°F for 30 minutes. Sprinkle with the 1 cup cheddar cheese. Bake an additional 10 minutes. Let stand 10 minutes before serving.
