Ingredients:

1-½ cups all-purpose flour

1 cup sugar

1 teaspoon baking soda

½ teaspoon salt

½ teaspoon ground cinnamon

3 medium ripe bananas, mashed

1 medium egg, lightly beaten

1/3 cup plain nonfat yogurt

1 teaspoon vanilla extract

Directions:

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine the flour, sugar, baking soda, salt, and cinnamon.

3. In a medium bowl, stir together the mashed bananas, egg, yogurt, and vanilla.

4. Pour into flour mixture; stir until combined.

5. Coat a muffin pan with non-stick spray and fill each cup ¾ full.

6. Bake for 15-20 minutes or until a toothpick inserted in center comes out clean.
