Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 oz mozzarella cheese
- 1.25 oz pepperoni (about 16 slices)
- 1 large egg
- 1/2 cup finely crushed pork rinds
- 6 tbsp vegetable oil
- salt and black pepper, to taste
Directions
- Preheat the oven to 350°F and line a baking sheet with foil.
- Cut the chicken into four even pieces. Cut a pocket into the side of each piece without slicing all the way through. Stuff each pocket with mozzarella and pepperoni and season lightly.
- Beat the egg in a shallow dish and place the crushed pork rinds in another dish. Dip each piece in the egg, then coat it with the pork rinds, keeping the pocket closed.
- Heat the oil in a skillet over medium-high heat. Brown the chicken for 2-3 minutes per side, then transfer it to the baking sheet.
- Bake for about 25 minutes, depending on thickness, until the chicken reaches 165°F (74°C). Rest briefly before serving.
