3 pound boneless pork butt or roast
1 large onion
¼ teaspoon salt
5 large potatoes
1 large bay leaf
1 quart canned tomatoes
2 quarts sauerkraut
1 tablespoon fresh ground pepper
1. Cut pork in 1 inch cubes. Fry pork and onions in ¼ cup oil with ¼ teaspoon salt until lightly brown. Peel potatoes, cut into 1 inch cubes, add to pork mixture, add 8 cups of water, 1 bay leaf and cook potatoes only till firm.
2. Add the canned tomatoes, sauerkraut and pepper. Simmer 15-20 minutes which will cook the potatoes to right tenderness and serve.
3. If you can your own tomatoes and sauerkraut you can use them, but if you don’t. Purchase the sauerkraut in the plastic bags instead of in the can.
