"Healthy" Broccoli Cheese Soup

Ingredients:

onion, diced small

carrot, diced small

garlic, minced

1-2 bunches broccoli, including stems

1 c milk

1-2 c grated cheddar

a tiny bit of nutmeg, like 1/8 tsp

Directions:

1. Add to crock pot with pepper, a little salt, red pepper flakes and just enough chicken broth to cover. Cook on low until veggies are soft.

2. At this point you can use an immersion blender if you wish, but not necessary. Add milk and cheese. Cook another 30 minutes. Keep in mind, as with all soup recipes this can really be adapted to preferences and taste.
