Ingredients:

2 c carrots, sliced

2 c celery, sliced

2 c onions, chopped

18 c water

2 tablespoons salt

1 tablespoon pepper

2 c diced potatoes

4 c crushed tomatoes

3 tablespoons basil

½ tablespoon red pepper, optional

1lb hamburger, brown, season

salt and pepper

Directions:

1. Cook carrots, celery and onions in the water with the salt and pepper.

2. When vegetables are just about done add potatoes, tomatoes and seasonings; simmer.

3. Meanwhile, fry the hamburger sprinkle with salt and pepper.

4. Add to soup when potatoes are almost done. Cook until potatoes are done. Adjust salt and pepper as needed.
