1 tsp extra virgin olive oil
1 lb boneless center cut pork chops (3-4 pork chops)
2 tsp salt
2 tsp pepper
2 tsp garlic powder
1 tsp chili powder
1 1/2 cups brown rice
3 cups chicken stock, divided
1 french onion soup mix packet
fresh chopped parsley for serving (if using)
1. Heat oil in a large skillet over medium heat.
2. Season pork chops with salt, pepper, garlic powder & chili powder on both sides. Sear the pork chops in the hot pan on each side until nicely browned, about 3-4 minutes per side. Add rice into the slow cooker.
3. In a bowl or large measuring cup combine chicken stock and french onion soup packet until well combined. Pour half of the mixture over the rice and stir to combine. Place seared pork chops over rice. Pour remaining soup mix over pork chops.
4. Cook on low for 5-6 hours or on high for 2-3 hours, or until pork is tender and most of the liquid is gone.
5. Serve with fresh parsley.
