1 hen (about 1 1/2 lbs)
2 parsnips
1 carrot
1/2 sweet onion
2 cloves garlic
1/2 t salt
1/4 t each: paprika, sage, rosemary and thyme
1 c water
1 handful of fresh chopped parsley
lemon wedges for serving
bread and butter or cooked rice for garnish
1. Mix dry seasoning. Cut up vegetables. Cut hen or season whole. Add parsnips, carrots and onion to pot with water.
2. Top with hen, garlic and parsley. Cook on low for 5 hours, longer for a larger bird.
