1 bag of frozen Quorn mince
sweetcorn (canned or frozen)
1 carton of passata
1 tin of chopped tomatoes
1 tin of kidney beans
3 chopped peppers
3 cloves of crushed garlic
2 tablespoons of chili powder
1 tablespoon of chili flakes / crushed chills
1 tablespoon of cumin
1 tablespoon of mixed herbs
1 teaspoon of onion powder (or 1 chopped onion)
sweet potatoes
cream cheese
1. Just put everything in the Slow cooker and give it a stir!
2. This may be too spicy for some, so you could just start off with 1 teaspoon of each spice then add more as you go along.
3. This can also be made with real mince, chicken or Quorn chicken pieces.
4. For the sweet potato jackets just thoroughly wash the sweet potatoes and chop off the knobby ends, then place on top of chili to cook together. If they sink down that's ok!
5. Cook on high for approx. 6 hours, will let you know exact timings once it's done..
6. To serve retrieve the jackets from the chili and slice them open, then put the chili on top. Then top them with cream cheese, grated cheese, or sour cream.
