Ingredients:

1 loaf ciabatta

2 cloves garlic

2 large tomatoes

1 medium cucumber

1 large red pepper

1/2 medium red onion

15-20 fresh basil leaves

3 tbsp olive oil

2 tbsp red wine vinegar

salt and black pepper

Directions:

1. Preheat a grill or grill pan over high heat.

2. Lightly drizzle the bread with olive oil and grill for about 3 minutes per side, until nicely browned and crisp.

3. Rub both sides of the bread lightly with a garlic clove half, then cut the bread into cubes.

4. Toss the toasted bread with the tomatoes, cucumbers, bell peppers, onion, and basil in a large bowl.

5. Drizzle in the olive oil and vinegar.

6. Season with salt and pepper.
