Ingredients:

2 cups of couscous

1 onion

1 garlic

2 red/yellow peppers without skin

3 hands of rucola salad

olive oil

red wine vinegar

hand of fresh chopped mint leaves

salt

pepper

Directions:

1. Taka a pan and fry the garlic and onion over medium heat in some olive oil.

2. Than add the couscous and toss well.

3. After a minute, add boiling water and cook according to the directions on the couscous package.

4. Mix the couscous, peppers, mint and rucola leaves.

5. Drizzle some olive oil and red wine vinegar.

6. At last add salt and pepper to your taste.
