Quinoa, Avocado, Tomato Black Bean Salad

Ingredients:

1 cup cooked quinoa

1 can black beans

1 cup roasted corn

1/2 cup avocado

1/4 red onion

cherry tomatoes

a few sun dried tomatoes

roasted red peppers

1 t. lemon juice

garlic powder

salt and pepper

a vinegar

Directions:

1. Place cooled quinoa in a bowl (1 cup cooked quinoa toasted dry in the pan with about 1 t of olive oil and add chicken bouillon. Set aside to cool.

2. Mix salad Ingredients: and spread on top of the quinoa base.

3. Add some diced cucumber and it would of been nice with some fresh herbs, like cilantro or parsley.
