1 lb boneless skinless chicken breast, cut into bite size pieces 1 lg green pepper, chopped
1 lg red pepper, chopped
1 tbsp chili powder
3/4 c thick n chunky salsa, divided
2 oz neufchatel or cream cheese, cubed
3/4 c four cheese shredded cheese, divided
8 whole wheat torillas
1. Heat oven to 375 degrees.
2. Heat large skillet sprayed with cooking spray on med heat, add chicken, peppers, and chili powder, cook and stir for 8 min or until chicken is done. Stir in 1/4 c salsa and neufchatel or cream cheese, cook and stir 3 to 5 min or until cheese is melted and mixture is well blende. Stir in 1/4 c shredded cheese.
3. Spoon heaping 1/3 c mixture down center of each tortilla, roll up. Place seam sides down, in 13x9 in baking dish sprayed with cooking spray. Top with remaining salsa and shredded cheese, cover, bake for 20 min or until heated thoroughly.
