1 cup butter (2 sticks)
2 1/4 cups packed brown sugar
6 eggs
2 teaspoons baking soda
4 1/2 cups all-purpose flour
3 cups chopped pecans
3 cups raisins
1 cup chopped chocolate chips
1/4 tsp vanilla extract
1. Preheat oven to 350 degrees.
2. Cream vanilla, eggs, sugar & butter in a large bowl with a mixer. Add baking soda and gradually add the flour, mix till smooth dough forms. Stir in the pecans, raisins and chocolate chips. The dough will be very thick.
3. Using an ice-cream scoop, place 12 scoops on a ungreased cookie sheet and bake for about 12 minutes. Cool on a rack. Cookies will be firm on the outside and soft and chewy inside.
