1 cup caster sugar
2 eggs
1 tsp vanilla
2 tbsp butter
1 cup milk
2 tsp vinegar
1 cup flour
2 tsp bicarbonate of soda
1/2 tsp salt
1/2 cup caster sugar (sauce)
1 cup cream (sauce)
2 tbsp butter (sauce)
1 teaspoon caramel essence (sauce)
1. Heat oven 160℃.
2. Beat sugar, eggs, vanilla and butter together into light creamy consistency. Add milk and vinegar.
3. Sift dry ingredients together. Add flour mixture gradually to egg mixture, mix well.
4. Place mixture into a lightly greased ovenproof dish.
5. Bake for 25 minutes.
6. Sauce. In a medium size saucepan mix all the ingredients together. Heat at a low temperature until butter and sugar melts.
7. Remove Malva pudding from the oven, pierce warm pudding with a fork and pour sauce over. Serve hot with custard, whipped cream or ice cream.
