4 medium sweet potatoes, diced
1 large avocado, diced
½ cup cherry tomatoes, halved
1 small red onion, diced
½ cup homemade mayonnaise
1 tbsp. chipotle peppers in adobo sauce
½ tsp. cumin powder
1 tbsp. apple cider vinegar
1 tbsp. fresh lime juice
2 tbsp. coconut oil, melted
sea salt and freshly ground black pepper
1. Preheat your oven to 375 F.
2. Toss the sweet potatoes with the coconut oil in a bowl.
3. Place the sweet potatoes on a baking pan and roast for about 30 minutes or until they are tender. Once ready, set aside to cool down.
4. Combine the mayonnaise, chipotle sauce, cumin, apple cider vinegar and lime juice in a large bowl and season to taste with salt and pepper.
5. Add all the remaining ingredients and give everything a good stir. Cover and refrigerate for 1 hour to chill or serve immediately.
