1 container (16 ounces) fat-free ricotta cheese
1⁄3 c confectioners' sugar
1 tbsp freshly grated orange zest
2 tsp freshly grated lemon zest
1 tsp freshly grated lime zest
1⁄2 tsp vanilla extract
3 c semisweet chocolate chips, divided (mufa)
12 large cannoli shells
1. In a medium bowl, combine the ricotta, confectioners' sugar, orange zest, lemon zest, lime zest, and vanilla extract. With an electric beater, whip until light and fluffy. Gently fold in 21⁄2 cups of the chocolate chips, setting aside the remaining 1⁄2 cup.
