(2) 15.5 oz cans of garbanzo beans (chickpeas), rinsed & drained
(1) medium-large cucumber, diced
(3) roma tomatoes, diced (or substitute cherry tomatoes, halved)
¼- ½ small onion, diced
¼ cup balsamic vinegar
2 tbsp olive oil
salt & pepper (to taste)
1. In a large bowl combine beans, diced cucumber, diced tomato and diced onion.
2. In small bowl combine balsamic vinegar, olive oil, salt and pepper, whisk together. Drizzle vinegar and oil mixture over vegetables and toss to coat. Chill for at least 30 minutes. Serve and enjoy.
