Ingredients:
1 box Pillsbury Already Pie Crusts (there are two pie rounds in a box)
1 pre-cooked rotisserie chicken from the grocery store (or cook your own chicken)
1 small package frozen mixed vegetables
1 small can whole potatoes
1 stick margarine
1/3 cup flour
2 cups milk (approximate)
Directions:
- 1. Debone and cut up rotisserie chicken. Or your own cooked chicken.
- 2. Precook frozen mixed vegetables in the microwave for about 4-5 minutes. Cut up potatoes into small dices. Mix together chicken, vegetables and potatoes.
- 3. In a skillet, melt margarine, stir in flour, pour in milk. Salt & pepper to taste. Simmer until you have a very thick gravy. Pour gravy over the chicken mixture in the bowl.
- 4. Line a deep-dish pie plate with one round of pastry dough. Pour in the chicken mixture filling, cover with the other pie crust. Seal edges like you would for a pie. Make slits in the top of the pie for steam to escape.
- 5. Bake in oven for 45 minutes at 400 degrees or until crust is golden brown.
