Ingredients:
2 tbs. oil
4 cloves garlic, minced
1 cup honey
1/4 cup soy sauce
1 tsp. black pepper
4 large chicken breasts, halved and pounded (chicken)
2 cups flour (chicken)
4 tsp. salt (chicken)
3 tsp. black pepper (chicken)
2 tsp. ground ginger (chicken)
1 tsp. cayenne (chicken)
4 eggs (chicken)
4 tbs. water (chicken)
oil for frying (chicken)
Directions:
- 1. For the Honey Soy Glaze. In a small saucepan, heat the oil over medium heat until hot. Add the garlic and sauté for approximately 1 minute.
- 2. Add the honey, soy sauce, and pepper and bring to a simmer. Watch the mixture closely because the sauce foams and will boil over if not watched. Once sauce simmers, turn off the heat and set aside until the chicken is ready to be dipped.
- 3. For the Chicken. In a shallow dish, mix the flour, salt, black pepper, ground ginger, and cayenne. In another dish, whisk the eggs and water together and set aside.
- 4. Heat a large skillet on the stove over medium heat. Add enough oil to just cover the bottom of the pan.
- 5. While the oil is heating, dip the chicken in the flour mixture, then dip the floured chicken in the egg wash, then dip the chicken one more time in the seasoned flour. Pan-fry the chicken in the hot oil for approximately 4-5 minutes per side, until each side is browned and the chicken is cooked through. Once chicken is cooked through, remove it from the skillet and place it to drain on a paper towel-lined platter.
- 6. Once chicken has drained for a few minutes, dip each piece of chicken in the honey soy glaze and serve immediately.
