Ingredients:
6 slices bacon
1 cup coarsely chopped onion
4 cans of delmonte canned and cut green beans, drained
6 new or red potatoes, cut into small bite sized chunks
chicken stock or broth, to cover
salt to taste
coarsely ground black pepper, to taste
3 tblspns of real butter
Directions:
- 1. Drain all of the cans of green beans, set the liquid aside. Using kitchen shears, or a sharp knife, cut up the bacon directly into a large saucepan and cook over medium high heat until it begins to turn brown.
- 2. Remove 1 Tbsp. of bacon and set aside. Add the onion to the pot and cook until it is softened, stirring occasionally.
- 3. Saute the drained green beans in with the cooked bacon and onion for 5 minutes. Add the potatoes to the beans.
- 4. Pour over enough chicken broth, and the reserved bean canning liquid, (if you are using it), to cover the beans, potatoes, onions and bacon.
- 5. Next add the 3 Tbsps. of butter, bring to a boil, reduce heat to medium, cover, and let them simmer for about 15 to 20 minutes, or until potatoes are tender. Add the 1 Tblspn of reserved bacon pieces for garnish. Taste and add salt and pepper as needed.
