Caldo De Albondigas

Ingredients:

2 large yellow onions, diced

2 tbsp. vegetable oil

1 14-oz.can tomatoes with juice

4 to 5 green chili peppers (hatch, anaheim or poblano)

1 1/2 quarts beef stock

1/2 tsp. cumin

salt

pepper

3 corn tortillas

1 lb. lean ground beef

1 egg, beaten

2 garlic cloves, minced

fresh cilantro to garnish

Directions:

  1. 1. In large pot, saute' onions in oil over low heat. Add tomatoes, chiles, stock, cumin, and salt and pepper to taste. Simmer over low heat for 30 minutes.
  2. 2. Cut tortillas into 1/4"x1/2" strips. In large bowl, combine tortillas, ground beef, egg, garlic and salt and pepper. Shape into meatballs about 1 1/2" in diameter and add to soup mixture. Put several meat balls into a large slotted spoon and lower them into the soup gently. Continue to cook over medium heat until meat balls float. Garnish with fresh cilantro. Serve with warmed tortillas.
