Ingredients:
2 large yellow onions, diced
2 tbsp. vegetable oil
1 14-oz.can tomatoes with juice
4 to 5 green chili peppers (hatch, anaheim or poblano)
1 1/2 quarts beef stock
1/2 tsp. cumin
salt
pepper
3 corn tortillas
1 lb. lean ground beef
1 egg, beaten
2 garlic cloves, minced
fresh cilantro to garnish
Directions:
- 1. In large pot, saute' onions in oil over low heat. Add tomatoes, chiles, stock, cumin, and salt and pepper to taste. Simmer over low heat for 30 minutes.
- 2. Cut tortillas into 1/4"x1/2" strips. In large bowl, combine tortillas, ground beef, egg, garlic and salt and pepper. Shape into meatballs about 1 1/2" in diameter and add to soup mixture. Put several meat balls into a large slotted spoon and lower them into the soup gently. Continue to cook over medium heat until meat balls float. Garnish with fresh cilantro. Serve with warmed tortillas.
