Marrow Cake

Ingredients:

1 marrow peeled and grated

8 oz self raising flour

125 ml sunflower oil

3 oz soft brown sugar

4 eggs

1 teaspoon bicarbonate of soda

2 tablespoon honey

1 teaspoon all spice

1 teaspoon cinnamon

1 teaspoon garam masala

1 teaspoon ginger

raisins is optional

Directions:

  1. 1. Mix all dry ingredients together.
  2. 2. In another bowl mix eggs sugar and oil together. Whisk for about 3 minutes.
  3. 3. Fold in dry ingredients and then add the marrow. But squeeze out most of the liquid from the marrow before adding to the mixture.
  4. 4. Transfer to a greased and floured tin and cook 160c for about an hour and a half.
