Ingredients:
2½ c coconut
1 c nuts, toasted and chopped
1 c condensed milk
1 t vanilla
20 saltine crackers finely crushed
2 egg whites beaten stiff
1 c semisweet chocolate chips
2 t shortening
Directions:
- 1. Mix the first 4 ingredients then add the crackers. Mix well. Fold in the egg whites.
- 2. Drop by rounded tablespoon onto lightly greased sheet. Bake at 350 degrees 12-14 minutes till lightly browned. Cool.
- 3. Melt the chocolate chips and shortening over hot water or in the microwave. Spread chocolate onto the bottom of the cookie and let sit upside down until dry.
