Coconut Macaroons

Ingredients:

2½ c coconut

1 c nuts, toasted and chopped

1 c condensed milk

1 t vanilla

20 saltine crackers finely crushed

2 egg whites beaten stiff

1 c semisweet chocolate chips

2 t shortening

Directions:

  1. 1. Mix the first 4 ingredients then add the crackers. Mix well. Fold in the egg whites.
  2. 2. Drop by rounded tablespoon onto lightly greased sheet. Bake at 350 degrees 12-14 minutes till lightly browned. Cool.
  3. 3. Melt the chocolate chips and shortening over hot water or in the microwave. Spread chocolate onto the bottom of the cookie and let sit upside down until dry.
