Ingredients:

6 cups of carrots, grated

1 cup of brown sugar

1 cup of raisins

4 large eggs

1 to 1/2 cups of white sugar

1 cup of vegetable oil

2 teaspoons of vanilla extract

1 cup of crushed pineapple, drained

3 cups all-purpose flour

1 to 1/2 teaspoons of baking soda

1 teaspoon of salt

4 teaspoons of ground cinnamon

1 cup of walnuts, chopped

Directions:

1. Combine together grated carrots and brown sugar In a medium bowl; Please set aside for 60 minutes, then stir in raisins.

2. Make sure to preheat the oven to 350 degrees F (175 degrees C) and grease and flour two 10 inch cake pans.

3. Pick a large bowl and beat in eggs until light. Then beat in, little by little, the white sugar, oil and vanilla. Stir in the pineapple and then combine the flour, baking soda, salt and cinnamon, stir into the wet mixture until absorbed.

4. Okay now, stir in the carrot mixture and the walnuts. And please pour evenly into the prepared pans.
