Cherry-Macaroon Cookies

Ingredients:

1/2 c butter, softened

3/4 c sugar

1/2 tsp salt

3/4 tsp almond extract

1/2 tsp grated, lemon rind

1 egg

1 3/4 c flour

1 tsp baking powder

1/2 tsp baking soda

1/2 c chopped, maraschino cherries

3/4 c shredded coconut

Directions:

  1. 1. Preheat oven to 375 degree F. Chop the cherries, drain well & set aside.
  2. 2. In a large bowl, combine the butter, sugar, salt, almond extract, lemon rind and egg, beat thoroughly.
  3. 3. Sift the dry ingredients together and blend into the butter mixture. Add the cherries and coconut, combine well.
  4. 4. On a greased baking sheet or a sheet covered with parchment paper. Drop by rounded tablespoonfuls. Bake for 10 - 12 minutes. Remove from pans to a cooking rack. Serves: 25 - 30
