Ingredients:
1 to 1.5 lb pork tenderloin
1/4 c coconut aminos
2 tbsp raw honey
1/2 tsp crushed red pepper
2 tbsp + more grapeseed oil (or another oil)
2 heaping c broccoli florets
1 red bell pepper, cut into thin short strips
2 tsp chives
Directions:
- 1. Cut tenderloin into thin strips.
- 2. Combine coconut aminos, honey, and crushed red pepper, and set aside.
- 3. Heat oil in wok (or large skillet) over med-high heat. Add broccoli and bell pepper strips, and stir-fry for at least 4 mins, adding more oil if necessary. Add pork and stir-fry until cooked thru and veggies are crisp-tender. Add coconut aminos sauce mixture and chives.
- 4. Stir-fry 3-4 mins more, until sauce is heated thru.
- 5. Serve over cooked cauliflower rice or zoodles.
