Gooey Chocolate Chip Blondies

Ingredients:

1/2 cup creamy almond butter

1/4 cup coconut sugar

1 pasture-raised egg

3 tbsp pure maple syrup

2 tbsp melted coconut oil

1.5 cup almond flour

1 tsp baking soda

1 tsp lemon juice

1/4 tsp salt

1/4 cup unsweetened almond milk

1/2 cup lilys-sweets sugar-free milk chocolate baking chips (+ moree for topping)

Directions:

  1. 1. Oven setting: 350F. Spray a 8x8 square baking pan with coconut oil & line with parchment paper (no additional spraying after the paper). Use a whisk to whisk together the almond butter, coconut sugar, egg, maple syrup, and coconut oil until smooth.
  2. 2. Add in the almond flour, baking soda, lemon juice, and salt. Make sure to pour the lemon juice directly on the baking soda to activate it. Stir with a spoon until even. Pour in the almond milk & stir again. Fold in the chocolate chips. Add batter to baking pan and push some extra chocolate chips on top.
  3. 3. Bake for 20 min. Pull from oven and let sit for a while. Pull from pan via parchment paper & let sit again. Carefully cut into 16 slices.
