Gluten Free & Lactose Free Raisin Loaf

Ingredients:

1 tablespoon Nuttelex

1/2 cup caster sugar

1 cup raisins

1½ cups GF self-rising flour

Directions:

  1. 1. Position rack in the lower half of the oven. Preheat to 180°C / 360F.
  2. 2. Line a loaf tin with baking paper.
  3. 3. In a saucepan, combine the Nuttelex, sugar, raisins, and 1 cup water and bring to a gentle boil. Reduce the heat and simmer for 5 minutes. Set aside to cool.
  4. 3. Add the flour and mix well. Turn mixture into prepared tin. Bake for 45 minutes.
