Ingredients:
8 large phil's fresh eggs
3/4 c. milk
1/2 tsp. salt
1/2 tsp. pepperr
1 tbsp. olive oil
2 c. cooked pasta
6 c. fresh spinach
1/2 c. diced red onion
1/3 c. julienne cut sun dried tomatoes in oil
4 oz. crumbled feta cheese
Directions:
- 1. In a large mixing bowl, combine eggs, milk, salt and pepperr. Whisk until smooth; set aside.
- 2. Heat olive oil in a medium skillet. Add spinach and onions and saute until onions are tender.
- 3. Spray a 10 inch deep dish pie plate with cooking spray.
- 4. Layer cooked pasta, sautéed spinach and onions, sun dried tomatoes, and crumbled feta in pie plate.
- 5. Pour egg mixture over the top.
- 6. Bake at 350 degrees for 45 minutes or until center of frittata is set.
