Ingredients:
250 ml heavy whipping cream
2 tbsp melted butter or coconut oil
2 whole large eggs
200 grams almond flour
1 tsp vanilla extract
2 tsp baking powder
1/2 tsp xantham gum
3 tbsp powdered or granulated sweetener
handful of blueberries
Directions:
- 1. In a medium size bowl Add the heavy whipping cream, eggs, melted butter, vanilla extract, xantham gum, baking powder and sugar substitute. Mix together.
- 2. Add the almond flour and mix until everything until just combined. It should be look a like cake batter. See the photo below. Mix the blueberry
- 3. Butter the ramekins and scoop some pancake batter, make sure it’s not too full, to prevent overflowing once you microwave it.
- 4. Microwave for 1 minute and 30 seconds and ready to serve.
