Rocky's Hot Sauce Original Hot Sauce
2 tbsp. butter
2 tbsp. flour
2 cups milk
1 1/2 cup shredded cheddar cheese
1/2 cup grated or freshly shredded parmesan cheese
2 cans of tuna
1/4 onion chopped fine
1/2 cup frozen peas defrosted
1 tbsp. mayonnaise
1/2 tbsp. Dijon mustard
won ton wrappers
olive oil
1/3 cup water
sliced green onion for garnish
1. In a coverable pot, melt butter on medium heat. Add the flour and stir to form a roux. Add milk and stir to incorporate everything and bring to a slow boil to thicken.
2. Once simmering, lower heat to low/ medium-low and stir in 1 cup of shredded cheddar cheese, 1/4 cup Parmesan cheese, 1 tbsp. Da Kine Da Rub and a pinch of Sabrosa BBQ Salt. Add 1 tsp of Rocky's Original Hot Sauce and stir.
3. Cover and set heat to low to keep warm while you make the dumplings. In a bowl, combine the tuna, onion, peas, mayonnaise, dijon mustard, 1 tsp Da Kine Da Rub, 1/2 tsp Sabrosa BBQ Salt, 1/2 cup of cheddar cheese, and 1/4 cup of parmesan cheese and stir to incorporate everything.
4. Take a tbsp. of the tuna mixture and place into the center of a Won Ton wrapper. Wet the edges of the Won Ton wrapper with your finger and some water and then fold in half so it forms a "triangle". Seal the edges by pinching, making sure to squeeze out any air.
5. Then fold the two bottom edges of the wrapper inward so it looks like an "open envelope, stick the corners together with some water and a squeeze. Place on parchment paper or a lightly floured plate to prevent sticking. Continue until all of the wrappers and tuna is used. This should make about 20 won tons
6. In a large, coverable frying pan, heat about 2 tbsp. of olive oil into a pan on medium high heat. Then place the won tons into the pan for approximately 2 minutes until golden brown. Then flip them over and fry for another 1-2 minutes until golden brown.
7. Add 1/3 cup water to the bottom of the pan and cover tightly to allow the won tons to steam for 5 minutes. Serve with the sauce green onion for garnish.
