Rocky's Hot Sauce Bacon Hot Sauce
2 chicken breasts
2 strips of bacon
4 tbsp. chive cream cheese
1 green onion sliced
1 tbsp. butter
2 tbsp. flour
2 cups chicken broth
1 tbsp. maple syrup
round won ton wrappers
3 stale waffles
1- 2 eggs beaten
1. Begin by boiling the chicken for 15 minutes.
2. Meanwhile, fry the bacon in a large, oven safe pan over medium high heat until crispy, rendering all of the fat. Once crispy set aside on paper towels. Once cool, you can crumble it.
3. Save the pan with the bacon grease for later.
4. Once chicken is done boiling, let it cool for about 10 minutes and then place it in a large bowl and shred it with two forks.
5. Add the crumbled bacon, 1 tsp, Da Kine Smoky Da Rub, 1/2 tsp Sabrosa Cumin Cinnamon Salt, 1 tsp Rocky's Bacon Hot Sauce, chive cream cheese and green onion and mix together thoroughly. Cover and set aside while you make the gravy.
6. Remove 1 tbsp. of the bacon grease and add to a pot and heat on medium heat. Save the pan with the rest of the bacon grease for later. Add 1 tbsp. of the butter and let melt. Add 2 tbsp. flour and stir to form a roux. It may clump. This is ok. Add the chicken broth, 1/2 tbsp. Da Kine Smoky Da Rub, 1/2 tsp Sabrosa Cumin Cinnamon Salt, 1 tbsp. Rocky's Bacon Hot Sauce, and 1 tbsp. maple syrup and stir.
7. Raise heat to medium high and bring to a simmer while occasionally stirring. Then cover, lower heat to low and let simmer/warm until use. Then take a won ton wrapper and place about 1 tbsp. of the cooled chicken mixture in the center.
8. Then wet the edges of the won ton wrapper generously with water and fold the wrapper over to form a "half-moon". Making sure to squeeze out any air, start by sealing around the filling, and then working your way to the edges, pinching and squeezing to fully seal the dumplings. If there is air left, the dumplings will "bloat" during cooking and may burst. Place the won tons on a lightly floured plate so they don't stick and continue until you have used all of the filling.
9. Preheat oven to 300 degrees. Place the waffles, 1/2 tbsp Da Kine's Smoky Da Rub and 1 tsp of Sabrosa's Cumin Cinnamon Salt into a food processor and pulse until the waffles have broken down into small bits. No bit of waffle should be larger than a pea.
10. Place the waffle mixture onto a plate and beat the eggs in a bowl. Heat the pan with the remaining bacon grease on medium high (Same pan as used for bacon). If there is less than 3 tbsp., add a little vegetable oil.
11. Then dredge the dumplings in the egg and then the waffle breading and place the directly in the hot oil and pan fry for about 2 minutes per side until they become golden brown. Then place directly into the oven for 5-8 minutes. Top with a green onions and a generous amount of gravy and serve.
