Apple Spice Caramel Cupcakes

Ingredients:

1 18.25 oz Spice Cake mix (i used Duncan Hines)

1 1/3 cups of water

1/3 cup vegetable oil

3 eggs

1 Large granny Smith Apple (cored and chopped)

1 bag of Caramels (approx 30 pieces)

1/4 cup evaporated milk

1/2 cup chopped peanuts

18 wooden Popsicle sticks

Directions:

  1. 1. Pre heat oven to 350 degrees, line cupcake pans with liners.
  2. 2. In a large bowl combine cake mix, water, oil, and eggs, mix on low speed.
  3. 3. Stir in chopped apples. Fill cupcake liners 3/4 of the way full.
  4. 4. Bake for 20 - 25 mins.
  5. 5. When cupcakes are cooled, melt caramel squares and evaporated milk in small saucepan on low heat until melted. Ice cupcakes and top with chopped peanuts.
