Bean Soup

Ingredients:

2 15.4 oz cans organic refried beans

1 14.4 oz can organic fire-roasted diced tomatoes

2 cups chicken stock

1 tsp cumin

1/2 cup sliced scallions or chopped parsley

1/2 cup Greek yogurt

Directions:

  1. 1. Combine the refried beans, tomatoes, chicken stock and cumin in a medium-large pot and simmer, stirring occasionally.
  2. 2. If you like a creamy consistency, purée all ingredients either in a blender in batches or with an immersion blender until smooth. Serve topped with yogurt and scallions or parsley.
