4 small (4-5 oz) Center Cut Pork Chops, extra-lean
1 tsp extra-virgin olive oil
2 tsp salt, divided
2 tsp pepper, divided
2 tsp garlic powder, divided
1 tsp onion powder, divided
1 lb red potatoes, chopped small
1 lb baby carrots
1 1/2 cups Cream of Chicken Soup
2 tbsp. flour
3/4 cup shredded cheddar cheese
1. Heat a large skillet with olive oil over medium-high heat.
2. In a small bowl combine salt, pepper, garlic powder & onion powder.
3. Season both sides of each pork chop with 1/2 of the spice mixture.
4. Sear pork chops on each side for 3-4 minutes, or until brown, remove from pan and set aside.
5. Spray you Crock Pot with nonstick spray.
6. Place potatoes and carrots in the bottom of the crock pot.
7. Season veggies with remaining seasoning mixture.
8. Place pork chops on top of veggies.
9. Pour soup over pork chops.
10. Cook on high for 3-4 hours or on low for 7-8 hours, or until pork is cooked through.
11. Using a slotted spoon remove pork chops and veggies and place on a platter.
12. Add flour to the remaining cooking liquid, whisking until smooth.
13. Cook on high until mixture begins to thicken.
14. Add in cheese, stirring until it is melted and sauce is smooth.
15. Serve over pork chops immediately.
