Ingredients:

4 finely crushed weetbix or vitabrits

1/3 cup of cocoa powder

3 tablespoons of melted butter/margarine or dairy free spread

1 cup of plain flour

1/3 cup of sugar use caster sugar, but any type will be fine

1/2 cup of coconut

1/3 cup of water

1 cup of icing sugar (icing)

2 tablespoons of cocoa powder (icing)

1 tablespoon of melted butter/margarine or dairy free spread (icing)

small amount of milk/soy or water (icing)

Directions:

1. Mix the crushed weetbix, cocoa and melted butter together in a bowl until well combined. Add the plain flour, sugar and coconut and stir well. Slowly add the water until all ingredients are well combined.

2. Press into a paper lined slice tin. make sure you have the paper hanging over the edge to make it easy to remove. Make sure you press it in quite firmly. Bake in a moderate oven for 15 mins.

3. The slice will be quite soft, but will harden slightly as it cools. If you leave it longer, it will make a crunchier slice, which some people prefer. Allow to stand in the tin for 5 mins.

4. While still hot, spread chocolate icing on top and sprinkle with extra coconut or hundreds and thousands. Allow to cool in the tin. Carefully lift slice out and slice into small squares. Store in an air tight container for 3 to 4 days. This recipe will freeze well. Just wrap with plastic and store in the freezer ready to pop into lunch boxes.

5. To make the chocolate icing. Mix icing sugar with cocoa powder. Mix in melted butter/margarine or dairy free spread. Slowly add a small amount of milk/soy or water until you have a nice icing consistency.
