2 cups old fashioned oats
2 cups rice crispies / rice bubbles
1/4 cup chopped freeze-dried strawberries
3 tbs oil
1/2 cup honey
1/2 cup corn syrup
1 tsp vanilla extract
1 cup yogurt chips
3 tbs strawberry powder (from freeze-dried strawberries)
1 tsp vegetable oil
1. Combine the oats, rice crispies and strawberries in a mixing bowl. Set aside. Combine the oil, honey, corn syrup and vanilla extract in a sauce pan.
2. Heat over medium-high heat until the mixture is melted and quite runny (not quite boiling). Pour the syrup mixture into the mixing bowl with the oats and rice crispies.
3. Stir the mixture until everything is evenly coated. Place parchment paper over a cookie sheet. Lightly spray the parchment paper with non-stick cooking spray.
4. Scoop the oat mixture onto the cookie sheet and spread it out evenly. Let the bars cool slightly.
5. To make the strawberry powder. Blend about 1/4 cup freeze-dried strawberries in a blender until fine and powdery. Melt the yogurt chips. Mix the strawberry powder and oil into the yogurt chips. Spread the yogurt mixture evenly over the granola bars. Let it cool completely. Cut the bars into squares.
