Ingredients:

½ cup butter or margarine (1 layer)

¼ cup sugar (1 layer)

5 tbsp cocoa (1 layer)

1 egg (1 layer)

1 ¾ cup graham cracker crumbs / digestive biscuits (1 layer)

¾ cup coconut (1 layer)

½ finely chopped walnuts (1 layer)

1/3 cup butter or margarine (2 layer)

3 tbsp milk (2 layer)

1 tsp mint extract (2 layer)

2 cups icing sugar (2 layer)

green food colouring (2 layer)

2/3 cups chocolate chips (3 layer)

2 tbsp butter or margarine (3 layer)

Directions:

1. To make first layer. Melt butter, sugar and cocoa in a heavy pot. Add egg and mix until cooked and thickened. Remove from heat. Incorporate graham cracker crumbs, coconut and walnuts. Press firmly in an un-greased 9 × 9” dish.

2. To make second layer. Mix butter, milk, mint extract, and icing sugar in a bowl. Beat well. Add green food colouring to desired green. Spread on top of first layer.

3. To make third layer. Melt chocolate chips and butter on low heat. Spread on top of second layer. Cool in fridge.
