One-Bowl Banana Chocolate Chunk Cookies

Ingredients:

2 large very ripe bananas

1 teaspoon vanilla extract

1 tablespoon melted coconut oil

1/2 cup almond butter

2 tablespoons Grade B maple syrup

1/4 cup chopped walnuts, lightly toasted

1 tablespoon sesame seeds

1/2 teaspoon cinnamon

1/2 teaspoon baking powder

1 cup rolled oats

2/3 of a vegan dark chocolate bar chopped into small chunks or shaved

Directions:

1. Preheat oven to 350 degrees Fahrenheit.

2. In a medium-sized bowl, mash the bananas well. Add in the rest of the ingredients and stir until combined well.

3. Spoon out 12 even-sized dollops of dough on a parchment lined cookie sheet.

4. Bake for 15-20 minutes, or until the bottoms begin to brown slightly.

5. Cool for 5 minutes and enjoy.
