Ingredients
- 1 cup uncooked rice
- 2 tb melted butter
- 3 green peppers, cut into strips (can use red or yellow peppers)
- 3 bouillon cubes
- 2 cups boiling water
- 1 pound ground beef
- 1 cup chopped onion
- 1 cup chopped celery
- 1 garlic clove, minced
- 1-15oz can tomato sauce
- 1 tsp dried oregano
- 1 tsp salt
- 1/4 tsp pepper
- 1-1/2 cup shredded cheddar cheese
Directions
- Sauté rice in butter in skillet, stirring frequently. Spread in greased 9x13" pan. Arrange green peppers on top of rice. Dissolve bouillon in water and pour over rice and peppers. Cover with Foil and bake 20 minutes at 375°F.
- Meanwhile, cook beef, onion, celery and garlic in same skillet until meat is done. Drain. Stir in tomato sauce and seasonings. Cover and simmer 5 minutes. Pour over rice and peppers. Cover and bake 15 minutes longer. Remove cover, sprinkle with cheese and bake uncovered 5 minutes longer.
Tip
Slightly undercook and cool the grain first; it will absorb the sauce while baking.
