Ingredients:

1/2 c granulated sugar

6 tbs all purpose flour

6 tbs pineapple juice

1 20 oz can of pineapple chunks, drained and juice reserved

1 20 oz can of crushed pineapple, drained

1 c grated sharp cheddar cheese

1 sleeve of butter crackers, crushed (recommend ritz)

1/2 cup (1 stick) of butter, melted and divided

Directions:

1. Preheat oven to 350℉. In a mixing bowl - combine sugar and flour. Drain pineapple, be sure to reserve six tablespoons of the pineapple juice.

2. Add the reserved pineapple juice to the sugar and flour. Whisk to combine. Add the drained pineapple chunks and crushed pineapple and stir to combine with the slurry mixture.

3. Melt one stick of butter.

4. Add two tablespoons of the melted butter to the bottom of a small baking dish. Give it a swirl to coat the bottom of the dish, a 6x9 baking dish but any small baking dish will do fine. Crush the Ritz crackers and add the crumbs to a small bowl.

5. Add the remaining melted butter to the cracker crumbs and stir to combine together. Add the pineapple mixture to the casserole dish and top with the shredded cheese.

6. Lastly, add a layer of the buttery cracker crumb topping. It's ready for the oven! Place the casserole into the preheated oven and bake for 30 minutes.

7. After baking time, remove the casserole from the oven and allow to rest 10 minutes. Serve warm.
