
Ingredients
- 12 eggs
- 1/2 cup sifted flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1-pint (2 cups) cottage cheese
- 16 oz shredded cheese
- 1/2 cup melted butter
- 2 cans (7 ounce) diced green chilies
- 1 onion sautéed
- 1 jar pimentos for the color
- sausage and little beef smokies (cut in half) and diced ham
Directions
- Beat eggs. Sift flour, baking powder and salt together and add to eggs. Add remaining ingredients. Pour into a greased 9 by 13 pan.
- Refrigerate overnight and bake the next morning.
- 400 degrees for 15 minutes; then turn oven down to 350 degrees for 35-40 minutes. Use toothpick to ensure the middle of the dish is firm.
- By sitting overnight it forms a kind of crust for the egg etc goodness. Optional ingredients: sausage, bacon, little beef smokies, spinach, broccoli, onions, mushroom, or zucchini. Tip: always microwave your little beef smokies to get the water and grease out.
