12 eggs
1/2 cup sifted flour
1 teaspoon baking powder
1/2 teaspoon salt
1-pint (2 cups) cottage cheese
16 oz shredded cheese
1/2 cup melted butter
2 cans (7 ounce) diced green chilies
1 onion sautéed
1 jar pimentos for the color
sausage and little beef smokies (cut in half) and diced ham
1. Beat eggs. Sift flour, baking powder and salt together and add to eggs. Add remaining ingredients. Pour into a greased 9 by 13 pan.
2. Refrigerate overnight and bake the next morning.
3. 400 degrees for 15 minutes; then turn oven down to 350 degrees for 35-40 minutes. Use toothpick to ensure the middle of the dish is firm.
4. By sitting overnight it forms a kind of crust for the egg etc goodness. Optional ingredients: sausage, bacon, little beef smokies, spinach, broccoli, onions, mushroom, or zucchini. Tip: always microwave your little beef smokies to get the water and grease out.
