refried beans (1 can)
onion
ground beef (3 lbs)
red enchilada sauce (1 can)
shredded mexican cheese or taco cheese (whichever you like) (2 small packages)
soft shell tortillas (1 pack)
diced tomatoes with green chilies (1 can)
taco seasoning
pico di gaio
sour cream
1. Preheat oven to 350°. Saute' onions and Brown ground beef together (Add salt, pepper, hamburger seasoning, garlic powder, and roasted garlic and herb to taste), drain most of the grease.
2. Drain some juice from diced tomatoes and add to ground beef. Simmer. Add taco seasoning.
3. Warm refried beans.
4. Line the bottom of a glass dish with refried beans, and then line with tortilla shells, add meat, add some enchilada sauce, add cheese.
5. Repeat layers. (I do 2 layers of each)
6. Put in oven for about 15 minutes.
7. Add Pico to taste, put back in oven for another 10 minutes.
8. Let sit for 5 minutes.
9. Add sour cream (and/or salsa) to your slice and enjoy.
