Ingredients:

1 medium spaghetti squash halved lengthwise and seeds removed

1 medium onion chopped

2 medium plum tomatoes chopped

1 cup cottage cheese

1/2 cup mozzarella cheese shredded

1/4 cup parmesan cheese

2 cloves garlic

1/4 cup parsley finely chopped

1 cup mushrooms chopped

1 bag turkey sausage crumbles

Directions:

1. Preheat oven 400 and grease a 13 x 9 pan.

2. Place squash cut side down on pan and bake for 40 minutes or until tender.

3. Once cooked take a fork and scrape squash strands into a large bowl.

4. Sauté onion in olive oil for 3 - 4 minutes.

5. Add tomatoes and mushrooms and cook 4 - 5 minutes.

6. Add turkey sausage crumbles and cook 3 minutes or until mixture is dry.

7. Add cottage cheese, mozzarella, parsley and onion mixture to the bowl with the squash. Stir to mix.

8. Put mixture into squash shells and bake 40 - 50 minutes or until heated through.

9. Sprinkle with Parmesan cheese and bake until melted.
