Boerewords in Red Wine and Tomato Casserole

Ingredients:

1tbls olive oil

2 med onions

Cracked pepper

Boerewors chopped into meatball size chunks

2tsp crushed coriander seeds

2 cans of diced tomato

1 can of water

1 gluten free stock cube

1/2 glass of red wine

Directions:

1. Sauté onion & cracked pepper in oil until transparent, add boerewors and fry until just brown.

2. Add coriander and fry for 1 min.

3. Add 2 cans of tomato with 1 can of water and 1/2 glass of red wine, bring to the boil then allow to simmer for minimum 1 hour.

4. Serve with rice or mash potato.
