- ⅓ cup of dry white wine
- ¼ teaspoon of dried thyme
- 4 cups of chicken broth
- 2 tablespoons of cold water
- 2 tablespoon of cornstarch
- ¼ cup of heavy cream
- 1-2 dashes of Worcestershire sauce
- ½ cup of frozen peas
- 1 tablebspoons of fresh thyme
- 2 cups of flour
- 1 tablespoon of baking powder
- ¼ teaspoon of baking soda
- ⅔ cup of grated Gruyere cheese
- 1 tablespoon of chopped parsley
- 1 tablespoon of chopped dill
- 1 cup of of milk
Directions
- Start by melting the butter (2 tablespoons) in a soup pot.
- Add the onion, celery and carrots and season it with salt and pepper to taste.
- Cover the pot and, with the heat on medium-low, allow 5-7 minutes for the vegetables to tender.
- Add the thyme and wine and let it reduce.
- Then add the broth and let it simmer.
- In a glass, mix the water and the cornstarch. This will thicken the mixture. Add it to the pot and stir.
- Once it's thicken, turn it to low, add the heavy cream, fresh thyme, Worcestershire sauce, frozen peas and correct the salt and paper.
- Set aside and let it cool.
- With the help of two forks, shred the roasted chicken.
- Add it to the pot and mix everything together.
- Poor the mixture in a baking casserole dish and preheat your oven at 425F.
- You can always use some ready to make biscuits to save a little bit of time, but the homemade touch always seems to make everything taste better.
- Now, for the homemade biscuits, start by combining the flour, baking soda, baking powder (4 tablespoons) and butter in a large bowl. Mix it with your hands.
- Add the milk, grated gruyere, dill and parsley and mix it together.
- After waiting 5 minutes to allow the baking soda to do its magic, the dough should look like this.
- Now scoop the dough into the casserole dish. Leave some space between the biscuits scoops so they can grow in the oven.
- Bake the casserole for 35-40 minutes or until the biscuits start to bubble and get a lovely golden brown color.
Tip
Cut the meat into even pieces and avoid overcooking it during the initial browning.
