4 lb handpicked loquats
2 tbsp minced raw ginger
6 tsp vanilla essence
3 cups white sugar
1. Remove skin, pips and white pith from loquats, cut into small chunks,
2. Add all ingredients into a sauce pan and heat on medium heat once start to boil blitz up with hand electric blender and continue to heat until jam sticks to back of spoon. Jar up into sterilised jars.
