4 quarts string beans
4 cups vinegar
4 cups water
1/2 cup kosher salt
8 garlic cloves
pickling spices
fresh dill
1. Prepare jars, lids and rings for water bath. Wash and stem string beans.
2. Pack tightly into sterilized jars. Add 1 generous tsp. pickling spices, a smashed garlic clove and a couple sprigs of dill to each jar.
3. Combine vinegar, water and salt in a sauce pan. Heat, stirring to dissolve salt. Pour over beans.
4. Wipe rims with a paper towel dipped in sterile water. Add hot lids and rings. Process in a hot water bath 10 minutes.
5. Remove jars to a dry towel. Let sit undisturbed for 24 hours. Check seals and remove rings for storage.
